Prepare the fatty fish to your liking by either baking, pan frying, searing, or grilling. (Leconte prefers baking as it offers the same nutritional benefits in 15 minutes or less.) Did you know eating salmon has shown to help with reducing the risk of heart disease and lowering blood pressure while aiding in weight loss and heart health? Even better, salmon fillets – including these gourmet-style kebabs – are an excellent source of protein, vitamin b12, and omega-3s fatty acids.
Load up on fresh produce and follow Leconte’s simple three-step kebab recipe. Once the salmon is marinated, preparation and cook time should be less than half an hour. Pro tip: Pan fry the salmon on medium heat for maximum flavor and tenderness.
Dice up all fresh produce and place into a large bowl. Throw in dry seasoning and extra virgin olive oil. Add the salmon chunks and mix together. Let marinate for at least two hours. For more flavor, consider marinating for up to 24 hours.
Place the salmon chunks and produce on kebab skewers and bake at 375 degrees or pan fry in a large skillet on medium heat.
For the salsa, simply dice the mango and add it into your favorite salsa mix. Similar to the salmon, let marinate for up to 24 hours.
