  • 2 salmon fillets
  • Salt and black pepper to taste
  • 2 tbsp. olive oil
  • 1 sprig fresh thyme
  • Juice of 1 lime
  • 2 lemons, cut into small wedges

Preparation

Brighten up your traditional salmon with a low-carb, lemon-infused version baked in foil. The best part? It’s extremely simple to prepare! All you need is a couple of fresh lemons, 2 pieces of foil, and a handful of pantry spices.

Pro Tips:

When cooking the salmon, keep the skin on, which will allow for extra moisture and additional nutrients. If you’re not into salmon skin, you can still cook with it on and then remove it after it’s done. (Salmon skin easily peels off.)

Also, if you’re worried about the salmon becoming overcooked, you can take it out when it’s not quite done but almost there, and let it sit in the foil at room temperature. This will allow for the salmon to continue cooking while not under intense heat.

Step 1

Place each salmon fillet in an individual foil piece. Season with salt and pepper, a pinch of olive oil, and lime juice.

Step 2

Garnish each piece of salmon with a few lemon wedges and chopped thyme. Then lightly wrap the salmon within the foil, leaving room for air to flow through.

Step 3

Place salmon inside the oven at 375 degrees and set a time for 16 minutes.

Step 4

Remove salmon and leave inside foil on the stovetop to cool. Serve and pair with a green vegetable and brown rice.
