  • 8 oz. salmon
  • 1 tbsp. minced almonds
  • 1 tbsp. breadcrumbs
  • 1 egg yolk
  • 6 oz. farro
  • 6 oz. kale, chopped
  • 1/2 yellow onion, sliced
  • 4 oz. Parmesan cheese
  • 1 tbsp. salt pepper mix
  • 2 tbsp. butter
  • 2 tbsp. olive oil
  • 1 lemon

Preparation

Amid Hernandez, who has worked as a chef for nearly 20 years, is sharing his beloved recipe for Almond Crusted Seared Salmon with Baked Farro. Hernandez, who has appeared on the Food Network, is known to make this plate for his clients at Chefit, a South Florida-based personal chef company.

Made with a dozen ingredients, surprise a friend or loved one at home by quickly cooking up this dish. Even better, the total cook time is just under an hour.

Step 1

In a plate, place the mix of breadcrumbs and almonds. Brush salmon with egg and place in breadcrumbs mix. Let it sit in the fridge about 15 minutes. 

Step 2

Cook farro in a pot with about 3 times the amount of water, until tender and seasoned. Make sure to place farro on a flat plate. Sauté onions on medium heat until caramelized. Sauté kale on high heat and lightly season with salt and pepper.

Step 3

Mix farro, onion, kale, and Parmesan cheese, and bake on 350 degrees until golden and cheese melts.

Step 4

After salmon is at room temperature, season it and sear it with crust side down at low to medium heat with half butter and oil until golden brown. Then turn and cook the skin until crispy. Cook salmon to desired temperature. Finish with a little bit of lemon juice.
